In most Italian restaurants, Chicken Marsala is sautéed. But here at Carrabba’s, we grill it to lock in the flavor. Hot off the wood-fired grill, the chicken is topped with mushrooms, prosciutto and our delicious Lombardo Marsala wine sauce.
We source the wine in our Marsala wine sauce from the Lombardo Winery, the only family-owned Marsala producer in Italy. Since 1881, they’ve been making the best Marsala wine in the region. Their secret is aging the Marsala in oak barrels for a year, which is longer than most producers!
