In Sicily, Picchi Pacchiu sauce is what cooks make for a quick tomato sauce with minimum cooking. At Carrabba’s it gets the same attention as any of our delicious sauces. Like all our sauces, our Picchi Pacchiu sauce is made from scratch with crushed tomatoes, garlic, extra virgin olive oil and fresh basil. When finished, it is poured over fresh, bronze-cut tagliarini pasta imported from Italy. We choose tagliarini for its porous texture, which makes the sauce stick to it perfectly.
