Mama Mandola’s Sicilian Chicken Soup
This recipe came from Damian’s mother and Johnny’s grandmother, Grace Mandola. It was always a favorite at Sunday night family dinners, and now it’s a favorite at our restaurant. Like Mama Mandola used to do, we make it from scratch with whole chickens, hearty pasta, fresh vegetables and a little kick. And as with all our soups, Mama Mandola’s Sicilian Chicken Soup starts with the same five fresh ingredients – tomato, celery, carrot, onion and garlic. It’s hot, hearty, homemade and heavenly.
